Cuts & Programs
- A5 Japanese Wagyu: Authentic Japanese A5 Wagyu — Miyazaki, Kagoshima, and other top-tier prefectures. Striploin, ribeye, tenderloin, and specialty cuts. BMS 10–12.
- American Wagyu: Crossbred Wagyu programs with rich marbling and buttery flavor. Full subprimal and portioned cuts. A step above Prime for menus that want differentiation.
- Australian Grassfed: Clean, lean, pasture-raised beef from Australian programs. Full range of primals — striploin, tenderloin, ribeye, flank, and more.
- New Zealand Grassfed: Free-range NZ beef with a mild, clean flavor. Tenderloin, striploin, and ground beef. Excellent traceability and year-round supply.
- USDA Choice: Reliable, well-marbled USDA Choice. Full cut range — ribeye, strip, tenderloin, chuck, brisket, short rib, and ground. The workhorse of most restaurant programs.
- USDA Prime: Top 2–3% of all graded beef. Exceptional marbling and tenderness. Ideal for steakhouse and fine dining programs where quality is non-negotiable.
- Ground Beef: Multiple lean ratios (80/20, 85/15, 90/10) across conventional and premium programs. Fresh ground for burger, meatball, and prep applications.
- Short Rib & Brisket: Bone-in and boneless short rib, whole packer brisket, and flat cuts. Ideal for low-and-slow, braised, and smoked preparations across all grade programs.
