A neat, uniform cylinder and the leanest common roast on the animal. It has almost no internal fat, so technique is everything: roast it gently, never past medium-rare, and slice it thin — done right, it’s an elegant, economical carving roast.

How to Cook It
Low roast / off-oven: 500°F blast then oven-off rest is the classic method.
Sous vide: 129°F / 54°C for 12–24 hours transforms it.
Carpaccio / cured: Its shape and leanness are perfect raw or cured.
