- Pork Chops: Bone-in and boneless. Center-cut and rib chops available. Berkshire's exceptional marbling makes these chops truly differentiated on the plate.
- Tenderloin: Fully trimmed and cleaned. Consistent weight and presentation. Berkshire tenderloin has exceptional tenderness and rich flavor versus conventional pork.
- Belly & Bacon: Skin-on and skinless belly available. Excellent fat-to-meat ratio for cured, braised, and slow-roasted preparations. Slab bacon on request.
- Shoulder & Butt: Bone-in and boneless. Perfect for pulled pork, braises, and charcuterie programs. Rich, flavorful, and ideal for long cook methods.
- Ribs — Spare & Baby Back: St. Louis-cut spare ribs and baby back ribs. Consistent meat coverage and proper trim for competition-quality results.
- Ham & Leg: Bone-in and boneless leg. Fresh ham for roasting programs and smoked ham applications. Available in various weights.
- Ground Pork: Custom lean ratios available. Fresh ground Berkshire pork for sausage programs, meatballs, dumplings, and blended applications.
- Whole Loin: Full pork loin for in-house cutting programs. Portioned as needed — chops, roasts, and tenderloin all from a single subprimal.
