- Rack of Lamb: Frenched and unfrenched. Domestic, Australian, and NZ origin available. Consistent fat cover and rib count per rack.
- Leg — Bone-In & Boneless: Semi-boneless and fully boneless options. Bone-in for roasting programs; boneless netted for portion control and stuffing.
- Shoulder: Bone-in and boneless shoulder. Excellent for braise-forward and low-and-slow preparations. Available in various pack weights.
- Loin Chops: Portioned loin chops for consistent plate presentation. Clean trim, uniform sizing.
- Ground Lamb: Custom lean ratios available. Ideal for Mediterranean-inspired menus, kofta, burgers, and meatball programs.
- Whole Carcass: Available for operations with in-house butchery. Domestic and imported programs. We coordinate cold-chain logistics from point of slaughter.
